I decided tonight to revisit the good old corned beef. I grew up eating corned beef and yet somehow have never managed to cook it myself. It felt like it was in the too hard basket for some reason.
I was excited when I saw this Thermomix corned beef recipe and decided it was time. I am always looking for dishes I can cook only using the Thermomix, and I am lead to believe many people have never used their Varoma. This recipe ticks both boxes – it really doesn’t get any easier than this!
Some people say Corned Beef is too salty and one way to lessen the saltiness is to soak in water for up to 2 hours. I soaked in a hot bubbly bath for as long as I could – 2 hours seemed a bit long though, there is only so many times you can top up the hot water. The family knocking on the bathroom door gets a bit annoying too. I found it didn’t really help with the saltiness either….. Oh…. What? Soak the meat in water….
I actually didn’t soak my meat either but didn’t find it too salty and it was just a corned beef from Woolworths so nothing organic or given any special treatment. Sorry lovely corned beef. Next time I’ll give you the nice bath….
Now if you have been reading any of my posts you will know I never follow a recipe exactly and change things to suit what is in the pantry or fridge. Or the whims of my family. Today the whims of the family won out. No 1 Child wanted roasted veggies for dinner and of course onion is to be avoided at all costs. Anyone else relate?

So basically I steamed the corned beef in the Varoma, baked veggies in the oven, steamed some veggies in the Thermomix and made cheese sauce in the Thermomix (using the recipe in the Everyday Cookbook). The onion sauce in the original recipe looks pretty good though – I’ll save it for when we have a no kid meal. What am I talking about? If we have no kids at home for dinner, we are out of here and eating out at a nice romantic restaurant.
At the end of the day, this Thermomix corned beef recipe is so easy it is being added to our regular meals. It is a great winter warmer recipe and if you follow as the original recipe linked above you get a great all cooked in the Thermomix meal using your Varoma.
- 1 Quantity of Bechamel Cheese Sauce (Everyday Cookbook)
- 1 piece of Corned Beef (approx 1.5 - 2kg - needs to fit in Varoma)
- 1 1/2 litres of water
- 40g brown vinegar
- 3 whole cloves
- 20g brown sugar
- Bay leaf
- Place water, vinegar, cloves, sugar and bay leave in Thermomix bowl
- Place corned beef into Varoma and place on Thermomix
- Cook for 1.5 - 2 hours Varoma Speed 2. Allow 1 hour per kg of meat.
- Once cooked remove meat from Varoma and allow to stand for a few minutes before slicing
- Cook sauce while meat is standing.
- Slice and cover with sauce - enjoy!
